At a lunch I attended with two colleagues, the question of following the advice of a nutrionist to switch to pumpernickel bread rather than white bread. Our cooking expert said he thought pumpernickel was just white bread with coloring and caraway seeds.
Was he correct?
J.C.
Dear J.C.
He was partially correct. American Pumpernickel is a blend of wheat and some rye. Coloring is added to make it dark and caraway seeds are added. But true Pumpernickel is made from coarsely ground rye and is baked over a very long time at a much reduced temperature which gives it a very thin crust and it's dark color.
Find a european bakery where true pumpernickel is sold and see and taste the difference. Two companies that sell real pumpernickel bread commercially are Mestemacher, and Rubschlager. These breads may be hard to find, but they are a good choice if available.
